Booke of secrets- Continuings

Here continues the nyce and trewe accounte of Alesone Gray of Cranlegh, Sugarwricht. This booke continues to explore the science and chemistry of sugar and it’s application in 16th century London England. The science of food, led me down the path of exploration into 16th century guild life. Persona and science became tangled together. What began as an adventure into creating a booke of secrets for a large household, evolved into a booke of secrets of a Master Grocer.  And while I have attained the SCA rank of Master for Arts and Science, I continue to study, research, experiment, and share the wonderful world of the London Grocer. This booke is ever evolving and continually growing.

The Most Kindly Way To Preserve

One of the great joys of preserving the harvest is you can enjoy summer time fruits all year round, including in the dark days of winter. Many fruits have a very short season and need to be picked and eaten or preserved quickly. In the United States, the tart cherry season lasts 1-2 weeks in June. Apricots are 4-6 weeks starting around mid May. Peaches and plums start around the end of June and can last through August, depending on region. Oyle of Rose- Part 3

I have removed the rose oil from the double boiler and strained it through a fine linen cloth mesh.  I have lost very little of the oil in this process. What I ended up with, was a lovely pale yellow oil that no longer smells like olive oil. It now smells distinctly like rose oil.

This will now get set in the sun and covered for ~40 days.
